Corte Vetusto is our exquisite, award-winning Mezcal from the foothills of the Sierra Mountains in Southern Oaxaca, the spiritual home of Mezcal. For nearly four centuries, true Maestro Mezcaleros have been creating mezcal in manner largely unchanged by the forces of time. Don Juan Carlos, our 4th generation Maestro Mezcalero, remains true to the traditional art of mezcal making. Firstly he selects only the finest, most mature agaves, before slow roasting them over mesquite wood in a sunken, rock lined earthen pit until perfectly roasted and seductively smoked. He then crushes the agave with a horse-drawn tahona, a volcanic rock wheel, with the aid of his trusty steed. The resultant bagaso is then transferred to open wooden vats to ferment, with the aid of spring water and natural airborne yeast only. This process takes weeks, as the saying goes ‘good things come to those who wait’. Finally, it is twice-distilled in either small copper and / or clay pot stills to produce an elixir unlike any other.
